Delphinium is a spike flower: a tall, straight stem carrying florets along its length, and one of the few sources of genuine blue in floristry that has not been tinted. Sea Waltz and Pink Planet cover the blue-violet and soft pink ends of the range.

Its job in an arrangement is height. Centrepieces built only from roses and fillers read as flat domes; delphinium breaks that line and draws the eye upward, which is why it appears throughout church work, pedestal arrangements and tall table designs.

Order two to three days before the event. Florets open from the bottom of the spike upward, so stems arriving with the lower third open will look right on the day. Delphinium drinks heavily, so keep water levels topped up.
